Tropical Beer Popsicles

We had no idea that creating the perfect beer popsicle recipe consisted of anything more than mixing ingredients together and freezing in a popsicle mold. Boy, were we wrong. The good news is that after 14 different recipe variations and a ton of mistakes, we finally came up with the perfect beer popsicles just in time for the height of summer heat.


INGREDIENTS

1 cup Beer
1 cup Fresh Pineapple
1 cup Coconut Milk
¼ cup of Simple Syrup

Notes:

  • Makes ten 3 oz. popsicles
  • We used DePOGginizer to give this recipe a tropical flavor, but nearly any beer would work well.

STEPS

  1. Place your empty popsicle molds in the freezer, consider this the popsicle version of preheating your oven. Getting the popsicle molds cold in advance helps prevent your popsicle mix from becoming icy during the freezing process. Plus, it forces you to carve out space in your freezer prior to having your molds filled.
  1. Blend together the pineapple, beer, simple syrup, and coconut milk. Depending on your preference of chunky versus smooth, blend accordingly. I prefer small chunks of pineapple in my popsicles, so I blend about 5 seconds. 
  1. Once your mixture is blended, pour into an airtight container and place in the freezer for up to 1 hour, stirring occasionally. While this may seem like an unnecessary step, doing so keeps the liquids from separating in your molds and also helps prevent iciness.
  1. Transfer mixture to a measuring cup with a spout for easy pouring. Fill popsicle molds about two-thirds of the way up, allowing room for expansion. Freeze till solid, approximately 6 to 8 hours.
  1. Once ready to eat, dip your popsicle molds in warm water for 10-20 seconds to help release your popsicles from the mold. Once free, sit back and enjoy your adults-only treat.
