Being so close to wine country, it’s easy for us to experiment with different varietals to make bold hybrids of grape and grain. 2000 pounds of lightly pressed Vermentino and Falanghina grape skins from Ridge Winery in Dry Creek, imparts notes of citrus blossom, lime leaf, stone fruit and a dry minerality.
