Kitchen Manager
Reports to: Executive Chef
Type: Full-time, Non-Exempt
Rate: $25-28
The Kitchen Manager at Drake’s supports the Culinary Director/Executive Chef in the management of the kitchen. This position, under the supervision of the Executive Chef, participates in food preparation, ordering, scheduling, supervision of the kitchen staff and is responsible for ensuring the proper storage of food.
Responsibilities
- Supporting the Executive Chef with running the food program.
- Placing orders for food delivery following order guides and pre-set pars.
- Ensuring all stock is properly rotated for freshness and quality on an ongoing basis.
- Maintaining acceptable ticket times.
- Contributing to weekly manager meetings by keeping other managers informed of kitchen goings on.
- Flexibility to step into other roles when necessary, i.e., working the line and prep to support the team.
- Overseeing prep management, prep production and delegating tasks to staff.
- Assisting in monitoring labor costs by ensuring breaks are taken and cutting staff as needed.
- Ensuring the line is flipped and clean before peak times.
- Closing down the kitchen following established guidelines.
- Setting the example to staff for being on time as well as practicing high standards of safety and cleanliness.
- Maintaining a calm and dignified demeanor.
- Making decisions and judgements that are fair, honest and defensible.
- Completes all projects in a thorough and timely manner.
- Scheduling staff appropriately to maintain labor and service standards.
Requirements
- Minimum 2 years prior cooking and supervisory experience
- Minimum 2 years experience working with a varied team in a high-volume food production facility
- Proven ability to multitask and prioritize
- Proven ability to perform under pressure without becoming overwhelmed
- Maintaining maintenance of kitchen equipment and reporting issues to EC
- Ensuring ongoing required training is completed by following up with EC
- Food Handlers Certification
- Experience with POS systems, tablets & other electronic devices
- Familiar with all of our offerings, from beverages to food
- Experience in high-volume a plus
