Hop Chef: Thai Gose to the Brewer

Cleophus Quealy opened their doors in the winter of 2014 and they’ve been slinging their Belgian-inspired beers ever since. We’re loving their fruit and barrel-aged beers in the ‘dro, and we’re loving that they’re picking up their paddles to participate in Hop Chef.

Kate Albee (Cleophus Quealy’s Marketing and Events Coordinator) drew lemongrass, and although they’ve never used it before, they were pretty thrilled. “We were very excited to pull this ingredient! It has the perfect subtle citrus notes and herbal aroma that complement our style of brewing: complex but comforting, dynamic, and pairs well with a variety of different foods.”

Their Hop Chef beer is going to be an intercontinental affair of east meets west. “Our brewmaster and co-owner, Dan, is an active scuba diver and his recent travels to Southeast Asia for a dive inspired the recipe.” So what should we expect of a Southeast Asian inspired Belgian beer? “We will be brewing a lemongrass gose with kefir lime, sea salt, and coriander,” reported Kate. Although they don’t normally name their beers they’ll be calling this creation “Thai Gose to the Brewer.”
